Gingerbread Man Cookies

 

今年已經係第二年做薑餅人了。上年冇將recipe寫好,以至今年又要憑回憶做,為之悔懊。
現在「的」起心肝,寫好佢。

What’s In? (for 30 large pcs)

Unsalted Butter 220g
Sugar* 200g
Molasses# 100g
Egg Yolk 2

All purpose flour 500g
Baking Powder 4g
Baking Soda 4g
Salt 6g

Cinnamon 2g
Cloves 4g
Ginger Powder 4g
Nutmeg 4g

*今次用了130g Brown Sugar+ 70g Granulated Sugar。但用caster sugar代替Granulated Sugar應該比較fine。又或連Brown Sugar都以Caster Sugar取代,免得加完molasses之後變成非洲薑怕人。
#Molasses在Citysuper有售,$30多元一瓶。很多recipe都以corn syrup取代。事實上我買的
Molasses像黑蜜得來有點獨特的焦苦味,今次不敢多下,一半用了蜜糖代替。

How to make?
牛油放室溫至軟,加入Sugar打至Creamy,下Molasses(and honey)及蛋黃,拌好後下其他乾材料再拌好成麵團。放入膠袋中,先用麵棒推平至6mm,連袋放入雪櫃數小時。

拿出雪至硬的麵團,剪開膠袋,用麵棒再推平滑,用曲奇模印出餅型,放入焗4分鐘。我見餅底易焗焦,入焗時放最高一格。而焗4分鐘的餅,從焗爐拿出來時仍然是有點軟身的,冷卻後就變硬。

About Royal Icing…
Confectioner Sugar 230g
Meringue Powder 3 Tbsp
Drinking Water 125ml less or more

Put the above ingredient together and whisk 10mins in medium speed. You might found it too hard or too soft to pip. Just adjust the water by adding a little at a time.

Separate the royal icing in to bowls and color the royal icing by ediable color. Pip on the cookies into a cute ones.
